This yummy dish can be enjoyed warm or cold. Save for a school or work lunch the next day.
Ingredients:
1 Box of organic Buckwheat Soba Noodles (I like the Eden Organic Brand) found in pasta section of stores
1/2 Teaspoon organic sesame seeds
Organic asparagus- around 6-7 stalks
Organic low sodium gluten free tamari
Directions:
Boil water, cook noodles for 6-8 minutes,
rinse, drain water and toss in a big bowl.
Add ½ tsp. of sesame seeds, and 6 stalks of
asparagus- should be raw and cut up into
bite size pieces.
Add a few splashes of tamari and toss with 2 big wide tooth forks.

Buckwheat (Soba) noodles: Soba is the Japanese name for 100% buckwheat. These noodles are high in potassium and protein, very low in fat, no saturated fat and are a low calorie food. They are gluten free, and are a low glycemic food.
Asparagus: high in glutathione, an important anti carcinogen, antioxidant. It contains rutin which protects small blood vessels from rupturing. Asparagus is a good source of vitamin A, C, E, B-complex, potassium and zinc.
