Deirdre's Homemade Mac & Cheese

Ingredients:

Organic penne pasta – 2 bags, Bionature

Raw organic Jack or cheddar cheese- shred 4 cups

Organic unbleached all purpose flour – 2 tablespoons

 

Nutritional Yeast Flakes- ½ cup

Organic Broccoli- nice size tree, cut up in small chunks

Organic unsweetened soy milk- 1 cup

Organic turmeric powder- 1 teaspoon

Sea salt – a dash or two

Organic first cold press virgin olive oil- to spread thin layer on the bottom of pan

 

Directions:

Pre-heat oven to 350 degrees. Shred your cheese and put aside a cup. Put the other 3 cups aside separately.

Wash and cut up broccoli tree into small bits and put aside.

Cook penne pasta, strain and put aside.

In an All-Clad stainless steel pan add the shredded cheese, soy milk, turmeric, nutritional yeast, flour and sea salt and stir for a few minutes on low heat until pretty thick and melted.

Take off burner and pour your pasta in an oiled Pyrex or baking casserole pan (please no foil, aluminum or microwaves). 

Add your broccoli and then pour in the cheese mix, and move around through the pasta noodles, cover every nook and cranny.

Then grab the last cup of the shredded cheese and add on top.

Put in the oven for approx. 27-32 minutes.

Serve with sprinkled nutritional yeast flakes like you would parmesan.
