Autumn Roasted Veggie Bowl

The Autumn Roasted Veggie Bowl is the perfect tasty fall dinner. It's quick and easy to make so you can make it when you're in a pinch, and not to mention it is super delicious. It's filled with veggies and healthy grains that are packed with nutrients and FLAVOR! Perfect for those cozy fall nights. 

 

 



Ingredients:

1/2  Cup spinach 
1/2  Cup broccoli 
1/2  Cup brown rice
1/2  Cup black beans
1/2  Cup roasted butternut squash
1/2  Cup avocado 
1     Whole wheat pita 

Drizzle of tahini 

Directions:

  1. First assemble your amount of desired spinach / greens in a bowl
  2. Place 1/2 cup of brown rice, 1/2 cup of black beans, 1/2 cup of broccoli, 1/2 cup of butternut squash onto your greens ( or your desired amount)
  3. Add sliced avocado
  4. Now for toppings ( optional) you can add on toasted whole wheat pita, and a drizzle of tahini. 
  5. Now enjoy the flavor bursting in every bite!
