If you LOVE basil, this is a quick, easy salad (meal) for you.

I recommend using all organic non GMO ingredients.





One large organic vine tomato (or your favorite -- yellow tomatoes work great too)

Approx 8 ounces (for one serving – 2 ounces) fresh mozzarella room temperature – sliced ¼ inch thick

Handful of salad leaves – organic lettuce  (tri-color always looks good)

¼  teaspoon organic dried basil

Approximately  8 fresh organic basil leaves

Your favorite dressing – for this I used organic Italian dressing

Salt & pepper to taste


Place some salad leaves on dish – sprinkle with a drizzle of dressing & dried basil.

Slice the tomato thin as you can and add once slice to salad.

Then add one slice of fresh mozzarella – adding some fresh basil to each slice.

Top with drizzle of dressing and more fresh basil.

I love this served room temperature.


Per serving, with 1 Tbsp dressing, this is approximately 190 Calories, 5 gm carbohydrate, 12 gm protein, and 14 gm fat.
