Bonnie's Bodacious Bean Soup

My best food memories are from my childhood. My dad made this simple navy bean soup every Sunday in the fall & winter. When it was ready, my sisters and I would sit and savor every drop.
Ingredients:
2 large organic yellow onions, chopped
1/2 bag organic navy beans-- soak in water 4 hours prior
olive oil
salt & pepper to taste
Directions:
Fill bottom of stainless steel quart pan with olive oil, very lightly
On medium flame add all onions and brown - caramelize both sides turning every couple of minutes.
Add salt pepper to taste, stir again
Drain beans, add beans and fill with water to 3/4 from top of pan
Half cover and cook on medium for 2 hours -- keep adding water
Last 30 minutes turn off and let sit covered
Beans should been totally soft and onions totally transparent and caramelized
Add fresh ground pepper and serve with lightly toasted pita chips.
