Bonnie's Extra Krispy Potato Bites

This is another take on my Krispy Spinach Bites and can be paired with your favorite chili.

 

 

 

Ingredients:

5 medium size Yukon gold potatoes
Extra virgin olive oil
2 Tablespoons Earth Balance buttery spread (vegan)
1 Box Organic Fillo dough 
1 Pound crumbled feta cheese
2 Lightly beaten organic eggs
Sea salt
Organic garlic powder (optional)
Makes approximately 2 dozen

*Fillo sheets are 9″ X 14″,  2 packages per box - use both.  Leave Fillo dough out at room temperature for two hours before preparing (comes frozen).                                                                                      
Preheat oven to 350 degrees-Convection Bake

Directions:

1. Rinse and peel potatoes. Boil until soft and strain water out completely.
2. Add sea salt, Earth Balance spread, 1 beaten egg and garlic powder (optional).
3. Mix as you would mashed potatoes, until a bit soft but very firm.
4. Mix in feta cheese.
5. Lightly brush olive oil on glass casserole.
6. Take one sheet of Fillo out at a time so it does not dry out.


**The trick to getting these very krispy is to very lightly brush the Fillo sheet each time you fold a section.

7. Lay one sheet out, fold in half (lightly brush with oil) and in half again and brush sheet lightly with oil again.

8. Add potato mixture to shorter end and roll Fillo very tight, place in glass casserole.

10.Bake approximately 30 minutes or until golden and Krispy.


Serve warm and enjoy with your favorite chili, salad or just alone as a good snack.
