Butternut Squash Vegetable Soup

My family has enjoyed this recipe for years.

 


Ingredients:

1    Butternut squash
2    Celery stalks
1    Onion
4    Tablespoons of olive oil
6    Cups Vegetable stock
Salt and pepper to taste

Directions:

Cut butternut squash, onion and celery into cubes
In a pot put olive oil, butternut squash,celery stalk and onion. Sauté for about 2 minutes.
Add 6 cups of vegetable stock and mix. Salt and pepper to taste and cook for about 45 minutes.
