Cauliflower Mashed Potatoes

Pass the cauliflower mashed potatoes please! Wait, did you just say cauliflower? Yes, you heard that right! This mash is made completely out of cauliflower, so it is completely guilt-free and healthy. Not to mention it tastes DELICIOUS! It is the perfect healthy Holiday dish that will have everyone begging for seconds. Plus, nobody will ever know it is made out of cauliflower!
( vegan, gluten-free, dairy- free)
Ingredients:
1 Head cauliflower
2 Tablespoons of Earth Balance butter/margarine
2 Tablespoons of Tofutti dairy-free sour cream
1/3 Cup soy milk or your preferred milk of choice
2 Cloves garlic
3 Table spoons fresh parsley
1-2 Chopped scallion
1/2 Tablespoon of Pink Himalayan salt
1/2 Tablespoon of ground black pepper
You will need:
- A food processor or blender
- A cheese cloth/drainer
Directions:
1. Boil or microwave the cauliflower with the 2 garlic cloves until it cooked all the way
2. Once the cauliflower is fully cooked you can put it in the cheesecloth and squeeze to remove any extra liquid from the cauliflower, or you can put it in a drainer and press it to make sure to remove any excess liquid
3. Once the cauliflower is drained you can pulse it in the processor/blender until it is a rice like consistency
4. Now you can add in the Earth Balance butter or margarine, Tofutti sour cream, soy milk ( or milk of choice), parsley, scallion, salt, & pepper
5. Blend until it is a creamy mashed potato consistency
6. Bake the mash in the oven for 20-30 minutes 350 degrees Fahrenheit
