Corn Pudding
Recipe by Foward Food & the Humane Society of the United States
Enjoy this delicious pudding as a side with dinner or lunch.
Ingredients:
1 Cup yellow cornmeal
1 Cup all-purpose flour
¼ Cup sugar, granulated
1 Tablespoon baking powder
15 Ounces cream corn, canned
15 Ounces whole kernel corn, canned
8 Ounces non-dairy sour cream, like tofutti or follow your heart
8 Ounces Earth Balance, non-dairy margarine
Preparation
1. Melt Earth Balance.
2. Blend cornmeal, flour, sugar, baking powder, cream corn, whole kernel corn, sour cream and Earth Balance. Pour into a ½ hotel pan. Be sure to spray with pan spray first.
3. Bake at 350 degrees for 40-45 minutes or until set.
Serving Suggestion
Serve as a side dish.
