Decadent Gluten-Free Pumpkin Chocolate Chip Loaf

This decedent Pumpkin Loaf is the perfect treat for the fall season. Not only is it heaven in your mouth, but it is also gluten-free, refined-sugar free and contains collagen peptides to improve hair, skin, nails, bone mass, etc. This loaf will nourish your body and soul.

I recommend using all organic non GMO ingredients.

 

 

 

Ingredients:

3 / 4   Can of pumpkin puree

1/4    Cup of organic honey

1/4    Cup of organic coconut oil

1 1/2 Cups of almond flour ( or Oat flour)

4       Tablespoons of collagen peptides

3       Organic cage-free eggs

1/4    Cup of organic unrefined cane sugar

1       Teaspoon of baking soda

1/2    Teaspoon of vanilla extract

1/2    Teaspoon of pumpkin spice

1/2    Teaspoon of cinnamon

A pinch of pink himalayan sea salt

1/2 and 2 Tablespoons of semi-sweet ( or dark) chocolate chips

 

Directions:

  1. Preheat your oven to 350 degrees
  2. In a bowl mix together your eggs, pumpkin puree, honey, coconut oil, vanilla extract, and unrefined cane sugar until it creates smooth consistency.
  3. In a separate bowl mix together your flour, collagen peptides, baking powder, cinnamon, pumpkin spice, and Himalayan sea salt.
  4. Add your dry ingredients into the bowl with the wet ingredients, then stir until it is a doughy-batter consistency.
  5. Fold your chocolate chips into the batter.
  6. Lightly butter or spray loaf pan and fold in batter.
  7. Bake your loaf for 50-60 minutes.
  8. Enjoy!
