Flavorful Sweet Potato

A delicious & unique twist on this low fat, vitamin packed sweet potato that is fresh and flavorful! Sweet potatoes are high in fiber and rich in vitamins and minerals, and contain substantial amounts of vitamin B6, vitamin C, iron, and potassium.



1     Large sweet potato – baked and split open lengthwise

1/2  Cup of canned black beans (rinsed)

Small bunch of spinach (or green of choice)

1/2   Chopped red onion

1/2   Cup cherry tomatoes

Salsa (your favorite)

Fresh Guacamole



1      Avocado

1/2   Lime

3-4   Tablespoons of fresh chopped cilantro

1/4    Red onion

1       Pinch of Pink Himalayan Sea Salt



  1. Place your spinach (or your preferred green of choice in a bowl) then add your sweet potato on top
  2. Before adding the toppings here is how to make the Fresh Guacamole! Mash up one whole avocado, then add in the fresh lime, chopped cilantro, and pinch of salt! Mix it all together to have your guacamole! You can add the guacamole to the inside of your sweet potato.
  3. Add your toppings onto your sweet potato, such as the black beans, cherry tomatoes, red onion, and salsa!
  4. Enjoy
