Gluten Free Pumpkin Bread

pumpkin_CakeIt would not be Halloween week in this office without a slice of homemade pumpkin bread. 
Nevertheless, my friend Loren Cordain, PhD, Professor Emeritus, Department of Health and Exercise Science, College of Applied Human Sciences, Colorado State University—the foremost authority on the evolutionary (Paleo) basis of diet and disease—strongly believes that baked goods and refined sugars, including gluten-free baked breads, should not be staples in our diets, they should be occasional treats.
We used a gluten-free flour combination of almond and coconut flour for today's Tasty Tuesday recipe, which we suggest that you have occasionally—as with all of the sweet desserts we feature.  View recipe
