Harvest Time Corn Salad
Try this refreshing salad as a side for lunch or dinner.
Ingredients:
4 Ears fresh corn on the cob
1 Cup cherry tomatoes (cut in half)
1 Cup cucumber (seeded and diced small)
1 Cup avocado (diced small)
½ Cup red onion (chopped small)
¼ Cup fresh basil (chiffonade)
¼ Cup juice of fresh lemons
Preparation:
1. Grill corn and cut off cob.
2. Toss grilled corn, cherry tomatoes, cucumber, avocado and red onion in a medium bowl.
3. Add basil and lemon juice, toss and serve.
