Stephanie's Fiesta Salad

This recipe is a favorite at any function my family has. It is healthy, tasty and is a good side dish with lunch and dinner or just by itself.

Preparation time: 20 minutes

 

Ingredients:
3      Ripe avocados
1      Large red onion
2      Cans of corn or 3 cups fresh corn
2      Cans of black beans
2      Peppers
3      Tomatoes
1/4   Cup chopped cilantro
Iceberg Lettuce/ romaine (Optional)

Dressing Ingredients:
1/4    Cup oil
1       Tablespoon brown mustard
1.5    Tablespoons of honey
Juice of 2-3 limes
Salt and Pepper to taste

Directions:

Dice Avocados, tomatoes, onions, and peppers. Mix all ingredients together and pour dressing a little at a time to taste. Better if salad sits in dressing for at least 15 min.
