Black Bean & Sweet Potato Burrito

Try this healthy, delicious , meat-free recipe.

Servings: 8



 

Ingredients:

8       12 inch flour tortilla shells
2       Cups black beans 
2       Cups sweet potatoes, cut into small cubes, roasted in oven until tender
1/2    Teaspoon cumin
1/2    Cup red bell pepper, small dice
1/2    Cup green bell pepper, small dice
1/2    Tablespoon fresh garlic 
1       Tablespoon chili powder 
1       Cup red onion, small dice

Preparation 
1. Sautee sweet onions, garlic and peppers.
2. Add black beans, sweet potatoes, cumin, and chili powder.
3. Portion ½ cup on each tortilla and roll up.

Serving Suggestion Spoon 2 oz. of black bean mixture on 1 flour tortilla, roll up, garnish with 1 tsp. of fresh chopped cilantro.
