Yunk's Grilled Cheese Sandwiches
Recipe by Deirdre Imus, The Imus Ranch: Cooking for Kids and Cowboys
Paired with a steaming cup of Tomato Soup, this sandwich sets the stage for a classic American lunch. You may find the cooking method unconventional but, trust me, it tastes great!
I recommend using all organic non GMO ingredients.
Prep time: 5 minutes
Ingredients:
8 Slices whole wheat bread
Trans fat free margarine
4 Thick slices of soy American cheese or
American cheese at room temperature
8 Long thin slices of cucumber
Cooking time: Approximately 10 minutes
Spread both sides of each slice of bread generously with margarine. Heat a large stainless steel pan over medium-high heat. When hot, add 4 slices of bread and grill for 1 minute on each side. Remove the grilled bread and immediately cover with a slice of cheese and 2 slices of cucumber. Grill the remaining 4 slices of bread in the same manner and top the cheese and cucumber with them. The heat from the warm bread will naturally melt the cheese and keep the cucumber crispy.
Makes 4 sandwiches
