Heavenly Autumn Kale Salad

Now that fall is approaching; this Heavenly Kale Salad is the perfect healthy autumn dish! Kale is one of the most nutrient-dense foods- packed with antioxidants, vitamins, and minerals. Not only is kale an excellent way to improve your overall health, but especially your immune system! This salad is packed with nutrients, protein, and fiber to nourish your body and soul, plus great flavor to keep you running back for seconds! The kale is marinated in a decadent citrus- clementine- olive oil dressing (to take away the bitter and toughness) and topped with delicious roasted sweet potatoes, chickpeas, edamame, pecans, and pumpkin seeds! The Heavenly Autumn Kale Salad is a fantastic lunch, dinner, and side dish for yourself or guests (if your willing to share haha)!
{I recommend using all Organic- Non-GMO ingredients }
This dish is: Gluten-free, grain-free, refined sugar-free, and dairy-free
Ingredients:
4 Cups of organic kale
1 Whole medium sweet potato
1/4 Cup of edamame
1/4 Cup of pecans
1/4 Cup of pumpkin seeds
1 Small clementine
1 Tablespoon olive oil
Pinch of sea salt
Directions:
Start by mixing 1 tablespoon of olive oil, a pinch of sea salt, and the juice of the clementine! Pour the mixture over your kale and begin to marinade and massage. Let the kale sit.
Chop your sweet potato in cubes, place onto a tray with your edamame, pecans, and pumpkin seeds. Lightly drizzle with olive oil and a pinch of sea salt! Bake in the oven at 350 for 15-25 minutes!
Once your vegetables are fully cooked/ roasted, place them on top of your yummy kale!
