Heavenly Stuffed Peppers

A delicious twist on your average stuffed peppers. Packed with vibrant vegetables, flavor, and plant based protein to leave you satisfied- but also running back for seconds!
Ingredients:
I recommend using all Organic & non-gmo ingredients
2 Large yellow peppers ( or pepper of choice )
1 Cup meatless ground beef
1 Cup of Banza tricolor chickpea rice cooked ( or rice of choice)
1 Diced zucchini
3 Diced cloves of garlic
1 Cup salsa of choice
Olive oil for sautéing
Optional:
2 tablespoons of Nutritional yeast for cheesy flavor
Directions:

First preheat your oven to 450 degrees Fahrenheit

Prepare rice

Place a little bit of olive oil into a pan to saúte your finely diced garlic, zucchini, and meatless ground beef

Once your veggies are sautéed, mix together with your rice, salsa, and nutritional yeast

Place your rice mixture evenly into your two peppers

Place your peppers into your oven at 450 degrees for 50-1 hour, until fully cooked on top
