Imus Ranch Alfredo Sauce
Recipe by Deirdre Imus, The Imus Ranch: Cooking for Kids and Cowboys
Alfredo sauce is traditionally served over pasta, but it’s equally delicious on top of rice or vegetables. The original version is made with heavy cream and full-fat cheese. Ours is just as delicious, but a great deal healthier.
I recommend using all organic non GMO ingredients.
Preparation time: 5 minutes
Ingredients:
12 Ounces extra-firm silken tofu, drained
1 Teaspoon onion powder
1/2 Teaspoon garlic powder
1 Teaspoon ground nutmeg
Salt, to taste
Cayenne pepper, to taste
1 Cup grated rice parmesan cheese or parmesan cheese
2 Cups soy milk or organic milk
Cooking time: 10 minutes
In a blender, puree the tofu, onion powder, garlic powder, nutmeg, salt, and cayenne 2 to 3 minutes, until smooth. Transfer the mixture to a small saucepan and cook over low heat until it reaches a rapid simmer.
Whisk in the cheese and soy milk, and continue to whisk 3 to 5 minutes. Remove from the heat and use the hot sauce to top your favorite pasta, rice, or vegetable dish.
Makes 4 to 6 servings
