Meatless Meat Loaf
Recipe by Deirdre Imus, The Imus Ranch: Cooking for Kids and Cowboys
Nothing says "comfort food" like a good old-fashion meat loaf, and our Ranch version is no exception. If you have any left over, the cold loaf makes great sandwiches.
I recommend using all organic non GMO ingredients.
Preparation time: 10 minutes
Ingredients:
2 14 ounce packages of soy ground beef substitute, crumbled
2 Eggs beaten
1/4 Cup ketchup, plus extra 1/4 cup (optional)
1/2 Cup rolled oats
1.5 Teaspoons dried oregano
1/4 Teaspoon salt
1/4 Teaspoon freshly ground black pepper
Cooking time: 35-40 minutes
Preheat the oven to 350 degrees. In a medium bowl, combine the ground beef, eggs, and ketchup; mix well.
Add the rest of the ingredients and combine thoroughly with your hands. Form the mixture into a loaf, set it on a baking sheet, spreading remaining ketchup over the top (if desired), and bake for 35 minutes or until firm and browned.
Makes 8 servings
