Mushroom Ceviche

This is a summer recipe that I have enjoyed since my childhood. It's quick and easy to make and tastes delicious.
 
 
 
 
 
 
 
 
 


Ingredients:
 
1   Small onion (yellow or purple)
1   Small pepper
1   Cup of green olives (pitted)
.5  Cilantro bunch
1   Teaspoon of vinegar
1   Tablespoon of extra virgin olive oil
Juice of lemon
1   Small pk of mushrooms (substitute for shrimp, crab or fish)
2   Medium tomatoes
1   Pound elbow or tri colored wheat pasta (optional)
 
Directions:
 
Finely chop all vegetables (except mushrooms) and mix in bowl. Add Vinegar, Olive Oil, and Lemon Juice (May be adjusted to taste). Add mushrooms and place in refrigerator for 30 minutes to allow flavors to merge. 
 
Optional:
You can prepare elbow or tri colored wheat pasta, allow the pasta to cool off and stir in ceviche to make a cold pasta salad.
