Orange Poppy Seed Muffins

These are really popular when we serve them for breakfast at the Ranch. Try them at home-they're quick to make, and the kids and cowboys at your house will like them as much as ours do.
Preparation time: 10 minutes
Ingredients:
Sunflower or safflower oil for brushing muffin cups
1.25 Cups unbleached white flour
2 Teaspoons baking powder
1 Tablespoon olive oil
1/4 Cup honey
1 Egg
2/3 Cup rice milk or organic milk
2 Tablespoons undiluted orange juice concentrate
1/2 Teaspoon vanilla extract
2 Tablespoons poppy seeds
Cooking time: 20-30 minutes
Directions:
Preheat the oven to 350 degrees. Brush the inside of 10 muffin cups with sunflower or safflower oil.
Combine the flour and baking powder in a medium bowl, stir to mix well and set aside.
In a seperate bowl, combine all the remaining ingredients except the poppy seeds. Pour the wet ingredients into the bowl with the flour-baking powder mixture and stir until well blended. Sprinkle the poppy seeds over the batter and stir to distribute them evenly.
Spoon the batter into the prepared muffin cups and bake 20 to 30 minutes, until the muffins are golden brown.
Makes 10 muffins
