Perfect Pumpkin Pecan Streusel Muffins

Perfect Pumpkin Pecan Streusel Muffins are the ideal treat! Yummy, decadent, and nutritious. The perfect breakfast, dessert, or snack to put you in the fall mood. Gluten-free and dairy free. The perfect treat to make in a pinch this fall season. Will make you come running back for seconds.

I recommend using all Organic-NonGMO ingredients
Makes: 12 muffins
Ingredients:
2 Cups oat flour
¾ Cup coconut sugar
1 Teaspoon baking soda
1 Teaspoon pumpkin spice
1/4 Teaspoon cinnamon
⅓ Cup coconut oil melted
⅓ Cup honey
¾ Cup pumpkin puree
1 Egg
½ Cup milk cashew or almond milk
1½ Teaspoon vanilla extract
½ Teaspoon pink himalayan sea salt
Streusel Topping:
⅓ Cup oat flour
4 Tablespoons chopped pecans
2 Tablespoon butter coconut oil
2 Tablespoon coconut sugar
½ Teaspoon cinnamon
Directions:

Preheat oven to 375 degrees.

In a bowl combine dry ingredients- oat flour, coconut sugar, baking soda, pumpkin spice, cinnamon and pink himalayan sea salt and mix.

In another bowl combine the wet ingredients until well combined- pumpkin puree, honey, egg, melted coconut oil, dairy free milk, and vanilla extract.

Add your wet ingredients and mix into your dry ingredients.

Streusel topping: Combine the ingredients- ⅓ cup oat flour, 4 tablespoons chopped pecans, 2 tablespoons butter, coconut oil, 2 tablespoons coconut sugar, and ½ teaspoon cinnamon in a bowl and mix.

Place your muffin mixture into into your muffin tray. Place 1 tablespoon of streusel topping and spread onto muffin mix.

Place muffins into oven and bake muffins for 30 minutes.
