Aborio Sweet Rice Pudding

Arborio is a short-grain Italian rice that contains a higher percentage of soluble starch than regular long-grain rice. It's the starch that gives arborio its characteristic creaminess, which makes it ideal if not only for risottos but also for this creamy, rasin studded pudding. It will keep, tightly covered in the refrigerator, for several days, but it's really best eaten right away. View recipe
