Pumpkin Spiced Energy Balls

A delicious snack to boost your energy. Great for the Holiday Season because they taste exactly like pumpkin pie! The perfect snack for whenever you want something tasty and nutritious.They are free of any processed chemicals and are loaded with healthy carbohydrates, protein, and fiber. They make a big batch so there’s plenty to go around!
They are gluten-free, dairy-free, and refined sugar- free.
You'll need a Food processor
Ingredients:
2 Cups of dates
1 1/2 Cup oats
1/2 Cup puréed pumpkin
1/3 Cup pecans
2 Tablespoons almond butter
1 Tablespoon vanilla extract
1 Tablespoon of maple syrup
3 Teaspoons pumpkin spice
Pinch of Pink Himalayan salt
Directions:
First remove the pits from the dates and soak them in boiling hot water for 5 to 10 minutes to ensure they are softened
After 5-10 minutes, add the dates into the food processor and blend until they are purée
Now add in all the other ingredients into the food processor such as the oats, pecans, almond butter, maple syrup, puréed pumpkin, vanilla extract, pumpkin spice, & a pinch of Pink Himalayan salt
Blend until you have a smooth-thick consistency
Roll the mixture into 1 inch balls! This should make around 30
After rolling the Pumpkin Spice Balls place them into the freezer for 30 minutes to harden. You can put them into the fridge to keep fresh longer. They last around 2-3 weeks (if you can make them last, because they are so good)
