Rainbow Summertime Lentil Quinoa Salad

Summertime is right around the corner and this Rainbow Summertime Lentil Quinoa salad is the perfect dish. This delicious dish is packed with healthy grains, vegetables, and fiber. Not to mention this quinoa dish is easy to make in a pinch and every bite is full of color, flavor, and nutrients. 


Gluten-free and sugar-free


{ I recommend using all Organic- NON 

GMO ingredients} 



1     Cup of uncooked quinoa

1     Package- 1 1/2 cups of cooked lentil

1/2  Red pepper

1/2  Orange pepper

1     Medium cucumber

1     Cup chopped parsley

3     Tablespoons chopped cilantro

1     Small red onion

1/2  Fresh lemon

1/4  Cup olive oil

2     Tablespoons red vinegar

1     Garlic clove

Pinch of pink Himalayan sea salt

1/4 teaspoon crushed black pepper

Optional: 1/4 cup of crumbled feta cheese



  1. Cook your 1 cup of quinoa as the package states and place it into a bowl.
  2. Chop finely parsley, garlic, and cilantro. Chop the rest of the vegetables- peppers, onion, and cucumbers. Place all the vegetables into the bowl of quinoa. 
  3. Add juice of the lemon, olive oil, red vinegar, salt, and pepper into the vegetable quinoa bowl and mix. Optional: add in your feta cheese . 
  4. Mix together and enjoy your Rainbow Summertime Lentil Quinoa salad!
