Raspberry Quinoa Applesauce

Recipe by Deirdre Imus, The Imus Ranch: Cooking for Kids and Cowboys
I recommend using all organic non GMO ingredients.
This is a great side dish to serve either at breakfast, lunch or dinner.
Preparation time: 10 minutes
Ingredients:
1 Pound red apples
1 Cup prepared quinoa
1/2 Cup raspberry-banana puree
2 Tablespoons raw unrefined sugar
1 Teaspoon ground cinnamon
1 to 2 Teaspoons freshly grated nutmeg
1/4 Teaspoon ground allspice
Directions:
Cooking time: 10 minutes
Bring a large pot of water to a boil. While the water is coming to a boil, peel, core, and slice the apples. When the water is boiling, add the apples and cook until soft, about 10 minutes. Drain and transfer the apples to the container of a food processor. Add the remaining ingredients and process until smooth. The applesauce is equally good served warm or cold.
Makes 2 cups
