Salads From Around The World-USA


With Earth Day approaching, we would like to feature a food directly from Mother Earth: Salad.There are many kinds of salad from around the world that highlight what is so good from our gardens. Leafy vegetables, tomatoes, cucumbers, peppers and even potatoes. Each week for the month of April, we will feature a salad from a different country. These recipes are delicious, good for you and easy to prepare.
Our third salad recipe takes us back home to the United States of America. These are some of my favorite salad recipes from our Imus Ranch cookbook. As we say on the ranch, Come and get it!


Mango-hothouse Cucumber Salad

This hearty but cooling salad is always welcome after a hot morning's work in the New Mexico sun. Once you try it, I'm sure you'll find it's a hit with the kids and adults at your ranch as well. We always use hothouse cucumbers at the Ranch, but any good organic cucumbers will do. The quinoa is a good source of complete protein. View recipe


Summer Cool Fruit Salad

There's nothing more refreshing - or good for you - than a bowl of sweet, ripe fruit. This one is as pretty as it is satisfying to eat. If all the fruits aren't available or there are others you prefer, let your imagination inspire your own substitutions. View recipe



Perry's Old World Potato Salad

This is the best!  Nothing beats this classic deli-style potato salad as a side dish with burgers or sandwiches. Just be careful not to overcook or overmix the potatoes, so they won't fall apart. View recipe
