Spiralized Summer Squash Salad

We are enjoying our spiralizer here at Muirhead Foods.  It is easy to use and easy to clean (watch the blade).  Summer squash is now available on the east coast in the markets and is a perfect vegetable to spiralize.  We keep it healthy by using Muirhead Balsamic Vinaigrette now made with organic ingredients and NO gmo's.  This dish is a good way to get your daily dose of seasonal vegetables.



4    Medium size yellow summer squash, clean and remove tips

1    Teaspoon sea salt

8     Sun dried tomatoes, thin slice or ½ cup cherry tomatoes, cut  in half

1/4  Cup fresh basil, thin slice

1/3  Cup Muirhead Balsamic Vinaigrette


Spiralize the squash.  Cut ribbons into bite size pieces.  Place in bowl and gently toss with the sea salt.  Allow squash to rest in refrigerator for an hour.  (This optional step makes the squash more digestible and flavorful in our opinion.)  Pour off accumulated water.  Toss with tomatoes, basil and Muirhead Balsamic Vinaigrette.  Serve immediately or keep for one day in the refrigerator.
