Strawberry Whole Grain Waffles

Whether you choose to top them with sliced strawberries or any other fresh fruit, these tender whole grain waffles make a truly spectacular breakfast treat. 

Preparation time: 10 minutes


I recommend using all organic non GMO ingredients.

Ingredients:

Breakfast
2     Eggs
2     Cups rice milk, or organic milk, or more as needed
2     Tablespoons vanilla extract
1/3  Cup raw unrefined sugar
2     Tablespoons trans fat free margarine, melted
1     Cup thinly sliced strawberries
1     Cup whole wheat flour
1     Cup unbleached white flour
2     Tablespoons rye flour
4     Teaspoons baking powder
1/2  Teaspoon ground cinnamon
1/2  Cup safflower oil

Cooking time: 3-4 minutes per waffle

Directions:

Preheat the waffle iron according to the manufacturer’s instructions.  In a large bowl, combine the eggs, rice milk, vanilla, sugar, and margarine. Sift the flours, baking powder, and cinnamontogether. Stir the sifted dry ingredients into the egg mixture.If the batter seems too thick, stir in a bit more rice milk. Fold in the sliced strawberries.
 
Oil the waffle iron and ladle the batter onto the hot iron, leaving a 1 –inch border around the edges.Close the iron and cook 3 – 4 minutes, until steam no longer rises from the waffle iron. Remove the waffle and keep it warm in the oven while you make the remaining waffles, re-oiling the iron each time before adding more batter.
