Wintertime Sweet Potato-Cranberry-Balsamic Salad

This Wintertime Salad is the the perfect dish. It's nutritious, delicious, and easy to make in a pinch! Mixed greens topped with roasted sweet potato, goat cheese, dried cranberries, crushed pecans, and tossed with a balsamic dressing. Of course this yummy salad will leave you satisfied and energized! It is a great salad on its own, on a sandwich, or as a side!

{I Recommend using all Organic-Non GMO ingredients}

 

Ingredients:

1       Bag of organic mixed greens ( or salad of choice)

1       Large sweet potato

1       Tablespoon olive oil for roasting the sweet potatoes

3/4    Cup of goat cheese

3/4    Cup of dried cranberries

1/2    Cup of crushed pecans ( or not of choice)

1       Bottle of balsamic dressing ( I used Trader Joe’s fat free balsamic vinaigrette)

 

Directions:

1. Preheat your oven to 375 degrees, dice your sweet potatoes into cubes. Marinate with 1 tablespoon olive oil, dash of ground pepper, and pinch of salt for taste. Roast your sweet potatoes in the oven until fully cooked, it should take around 15-25 minutes.

2. Put your mixed greens or salad or choice into a bowl. Top the salad with the roasted sweet potatoes, cranberries, goat cheese, and crushed pecans.

3. You can serve the salad two ways. The first way with your Balsamic Dressing as you eat it with around 2-3 tablespoons or as much as desired to make it last longer. The second way is that you toss the whole salad with the balsamic dressing, which is around 3/4 cup of dressing or as much as desired!
