Orange-Cashew Spinach Salad

This is a great salad that combines the bright color and citrus flavor of oranges with the dark, slightly bitter taste of tender, fresh spinach.  The unexpected crunch of roasted cashews is a pleasant surprise.

 

 

 

 

Ingredients:
Mandarin Oranges
1 Six ounce bag of baby spinach leaves(About 6 cups)
2 Cups Romaine lettuce, rinsed and torn
1/4 Cup Imus Ranch Honey Dijon Dressing or a Honey Dijon of your liking.
1 Cup roasted cashews

Preparation Time: 5 Minutes

Peel and section the mandarin oranges, removing as much of the white pith as possible. 
In a large salad bowl, toss together the spinach, romaine, and dressing. Top with the orange sections and sprinkle with the cashews.

Makes 4-6 servings
