Hackensack, NJ, 2004 -- Deirdre Imus, founder and President of The Deirdre Imus Environmental Health Center® at Hackensack University Medical Center, recently made many public appearances throughout the tri-state area and New England to unveil her new cookbook, The Imus Ranch: Cooking for Kids and Cowboys.

In the book, Ms. Imus takes readers inside The Imus Cattle Ranch for Kids with Cancer, an authentic 4,000 acre working cattle ranch that she and her husband, Don Imus, created to provide the experience of the American cowboy for children suffering from cancer and various blood diseases, as well as to the siblings of children who have suffered from Sudden Infant Death Syndrome.

Ms. Imus, who was accompanied by Mr. Imus, signed copies of her book and posed for photos with fans at Barnes & Noble bookstores at Boston University and Rockefeller Center in New York City, New York; Bookends Bookstore in Ridgewood; RJ Julia in Madison, Connecticut; Wentworth By The Sea in Portsmouth, New Hampshire; The Elm Bookstore in New Canaan, Connecticut; and Book Revue in Huntington, Long Island.

They also appeared on "The Today Show" on NBC, "The View" on ABC, "Larry King Live" on CNN, "Tim Russert" on CNBC, on The Chris Matthews show, and on Sports Radio 66/WFAN the Radiothon, on location at Hackensack University Medical Center and the New York Stock Exchange.

In addition, Ms. Imus was featured in the April issue of Organic Style and the May issues of Town and Country and Reader’s Digest.

All recipes in The Imus Ranch: Cooking for Kids and Cowboys are vegan – they contain no meat, fish, poultry, or dairy. The book is packed with full-color photography and more than 100 delicious recipes for simple soups and salads to main dishes and desserts. It helps the reader live a simpler, healthier life – one meal at a time.

The book begins with IT’S ALL ABOUT THE KITCHEN, an amusing essay on the trials and tribulations of employing a chef.
