Vicken Quesadilla

Here is another twist on the ever popular Quesadilla--this version uses a soy product that is an excellent imitatation of poultry called Veat Chick'n Free Gourmet Bites.

Preparation: 15 Minutes



4- Tablespoons Safflower Oil
4- 8 inch Whole Wheat Flour Tortillas
2- Cups Shredded Soy Cheddar Cheese or Cheddar Cheese
2- 8.5 ounce packages frozen Veat Chick'n Free Gourmet Bites Thawed
1- Cup Shredded Lettuce
1- Tomato, Diced

Cooking Time: 5-6 Minutes

Heat one tablespoon oil in medium skillet.  When oil is shimmering, place one tortilla in the skillet and sprinkle with 1/4 cup cheese and 2 ounces Gourmet Bites. Use a spatula to fold the tortilla in half, and continue to cook 2 to 3 minutes on each side, until the cheese has melted and the tortilla is brown on both sides. Slide the Quesadilla onto the plate and garnish with the shredded lettuce and diced tomato. Repeat with remaining tortillas.  Serve warm.
